Blueberry Lemon Breakfast Quinoa

Ingredients

  • .5c - uncooked quinoa
  • 1c - unsweetened almond milk
  • 1scoop - Vanilla IdealRaw Protein
  • 2tbsp - coconut oil
  • 2c - fresh blueberries
  • .25c - lemon juice
  • 2tbsp - water
  • 2tsp - lemon zest

Instructions

  1. In a small pot, whisk together Vanilla IdealRaw and almond milk until smooth. Add quinoa and bring to boil. Reduce heat and simmer about 15 minutes or until quinoa has absorbed almond milk.

  2. While quinoa cooks, add blueberries, coconut oil, lemon juice, and water to a saucepan. Bring to a boil, then simmer until mixture softens into a sauce, about 10 minutes.

  3. Divide quinoa into 4 bowls (about ½ cup each) and top with ¼ cup blueberry topping and ½ tsp lemon zest. Enjoy!
