Carrot Cake Protein Bites

These healthy Carrot Cake Protein bites are a scrumptious way to get your carrot cake fix while staying on track! 🥕

-Ingredients-
1 cup chopped carrots
1/2 cup pecans
1/4 cup coconut flakes
1/4 cup IdealRaw Vanilla protein
1 cup rolled oats
1/2 medjool dates (about 5 large dates)
1/4 cup cashew or almond butter
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1/3 shredded coconut

 

-Instructions-
Add carrots, pecans and coconut to food processor and blend until finely chopped. Add IdealRaw protein, oats, dates, nut butter and spices and blend until it comes together as a dough. Use a small cookie scoop or scoop into tablespoon sized balls. Roll in shredded coconut to coat. Refrigerate until ready to serve.
