Chocolate Banana Chunk Muffins

I think one of my favorite things to bake are muffins! You can customize them and get creative, plus they make the perfect snack! These chocolate banana chunk muffins will not disappoint! Super chocolatey and full of banana chunks, they satisfy any sweet tooth!

  • 2c - whole wheat white flour
  • - 1 scoop Chocolate IdealRaw Organic Protein
  • 2tsp - baking powder
  • .25tsp - salt
  • 2tbsp - cocoa powder
  • .5c - coconut sugar
  • 1tsp - vanilla extract
  • .5c - unsweetened applesauce
  • 1c - unsweetened almond milk
  • 1 - banana, diced
  • .5c - dark chocolate chips

  1. Preheat oven to 350 degrees, and spray a 12 cup muffin pan with non-stick cooking spray.  Set aside.

    In a medium sized bowl, combine the flour, protein powder, baking powder, salt, and cocoa powder.  Stir until incorporated.

  2. In another bowl, whisk together the coconut sugar, vanilla, applesauce, and almond milk.

    Add the wet ingredients to the dry ingredients and stir until combined.  Fold in the diced bananas and chocolate chips.

  3. Fill each muffin cup in the prepared pan with batter 2/3 full.  This recipe makes only 11 muffins.  Bake for about 20 minutes, or until a toothpick inserted comes out clean.  Let cool and enjoy!!
