Chocolate Peanut Butter Zucchini Brownies

Chocolate Peanut Butter Zucchini Brownies

Ingredients

  • .33c - natural peanut butter
  • .5c - unsweetened applesauce
  • 1tsp - vanilla extract
  • .25c - honey
  • .5c - white whole wheat flour
  • 2tbsp - cocoa powder
  • 1scoop - Chocolate Peanut Butter IdealRaw Organic Protein
  • 1tsp - baking soda
  • .25tsp - salt
  • 1c - zucchini, shredded w/skin
  • .33c - mini chocolate chips

Instructions

  1. Preheat oven to 350 degrees. Spray 8×8 brownie pan with nonstick spray, or wipe pan with coconut oil.

  2. Mix together the peanut butter, applesauce, honey and vanilla until smooth. Add the cocoa powder, flour, protein powder, baking soda, and salt; mix until combined.  Fold in the zucchini.

  3. Stir in half of the chocolate chips. Pour batter into baking pan and sprinkle remaining chips on top. Bake for 20 minutes. Cool before slicing into 12 squares.
