Chocolate Pistachio Cookies

You know what flavor combination is underrated? Chocolate and pistachio. It’s so good and it always reminds me of the holidays!

Chocolate Pistachio Cookies

  • 1.25 c blanched almond flour
  • 1 scoop Chocolate IdealRaw Protein
  • 2 tbsp cocoa powder
  • .5 tsp baking soda
  • 1 egg
  • 2 tbsp honey
  • 3 tbsp coconut oil, melted & cooled
  • .25 c coconut sugar
  • 3 tbsp chocolate chips
  • 3 tbsp pistachio nuts, chopped


  1. Preheat oven to 350 degrees, and line a baking sheet with parchment paper.
    In a medium bowl, whisk together the almond flour, protein powder, cocoa, and baking soda.

  2. Add in the egg, honey, coconut oil, and coconut sugar.  Stir until all the ingredients are combined.
    Using a cookie scoop, divide batter into 10 cookies.  Bake for 8 minutes in the preheated oven.

  3. Let cookies completely cool.  Melt the chocolate chips in a microwave and drizzle over cookies.  Sprinkle the pistachios on the drizzled chocolate.  Let the chocolate harden and enjoy!
