Chocolate Pistachio Cookies
Serving size is one cookie, makes 10
- 1.25c - blanched almond flour
- 1scoop - Chocolate IdealRaw Protein
- 2tbsp - cocoa powder
- .5tsp - baking soda
- 1 - egg
- 2tbsp - honey
- 3tbsp - coconut oil, melted & cooled
- .25c - coconut sugar
- 3tbsp - chocolate chips
- 3tbsp - pistachio nuts, chopped

Preheat oven to 350 degrees, and line a baking sheet with parchment paper.
In a medium bowl, whisk together the almond flour, protein powder, cocoa, and baking soda.
Add in the egg, honey, coconut oil, and coconut sugar. Stir until all the ingredients are combined.
Using a cookie scoop, divide batter into 10 cookies. Bake for 8 minutes in the preheated oven.
Let cookies completely cool. Melt the chocolate chips in a microwave and drizzle over cookies. Sprinkle the pistachios on the drizzled chocolate. Let the chocolate harden and enjoy!
