Strawberry Shortcake Protein Bites

These Strawberry Shortcake Protein Bites 🍓 are the perfect high protein snack for when you’re craving something fruity and delicious, but want something healthy and light.

1 cup rolled oats
1/2 cup coconut flour or oat flour
1/4 tsp salt
1 scoop Vanilla IdealRaw
1/2 cup vegan vanilla yogurt (we used Plant-Based Chobani)
1/2 tsp vanilla extract
1 TBSP unsweetened vanilla dairy-free milk of choice
3-5 fresh medium sized strawberries
1/4 cup coconut oil, melted
1 cup freeze dried strawberries

In a food processor, quickly pulse 3-4 times the oats, flour salt, and IdealRaw vanilla protein powder just to combine. Add vegan yogurt, vanilla, milk, coconut oil and fresh strawberries to the food processor, blend to combine.

Add the freeze-dried strawberries and pulse a few times just to evenly disperse the strawberries throughout. Scoop out a spoonful of the batter and roll into a ball – as an option, you can roll the balls in more freeze dried strawberries as we did. But this is optional. Repeat until you run out of batter. Store in the refrigerator or freezer until set. Makes about 20 protein bites.
