Do you ever get those afternoon munchies where you just need a little something sweet? I sure do!
These little granola bites come in handy when I have those days when I need to munch on something. They are sweet, yummy, and satisfy my sweet tooth without indulging in loads of sugar!
Sweet Granola Bites
Makes 36, serving size is one bite.

- 2.5 c cups old fashioned oats
- 2 tbsp coconut oil
- 2 tbsp coconut sugar
- 1 tbsp maple syrup
- .25 c honey
- .5 tsp cinnamon
- dash of nutmeg
- .25 c unsweetened coconut flakes
- 1 scoop Vanilla IdealRaw Organic Protein
- .5 c almond slices
- .25 c dried cranberries
- .25 c dark chocolate chips, melted
Preheat the oven to 350°F and scatter the oats on a baking sheet pan. Let them toast, stirring at least once, for about 20 minutes.Line a 8 X 8 pan with parchment paper or foil. You want a piece large enough that the sides will cover over the top of the bars once you fill the pan
While the oats toast, heat the oil in a small saucepan on the stove. Add the coconut sugar, maple syrup, honey, cinnamon, and nutmeg. Bring it to a simmer over medium heat, and turn the heat off.
Place the oats that have been toasted in a large bowl. Pour the hot liquid over the oats and stir to coat evenly. Stir in the coconut flakes, protein powder, almonds, and cranberries. Scrape the mixture into the prepared pan.
Fold the parchment or foil over the top of the granola in the pan and press firmly to fill the corners and flatten the bars. Smooth out the granola so that it is evenly pressed into the pan.
Let the granola bars set up in a cool dry place for at least an hour or overnight. You can also place them in the freezer if you’re in a time crunch.
Turn them out of the pan onto a cutting board. Peel the parchment or foil away. Cut them evenly into 36 small squares. Melt the chocolate in the microwave. Use a spoon to drizzle the chocolate, or dip the bottoms of the bars! Let it set up and ENJOY!
