We couldn’t think of a more delicious, more indulgent way to celebrate this weekend than waking up to these Cold Brew Tiramisu Pancakes!
2 Scoops IdealRaw Cold Brew
4 TBSP Cornstarch
4 Cups Dairy-free milk of choice (almond, cashew, soy, coconut, etc)
2 tsp Rum extract
2 Cups AP Flour or GF Flour
4 TBSP Cocoa Powder
2 TBSP Baking Powder
1 cup vegan Vanilla yogurt of choice (we used SoDelicious Coconut Yogurt)
Vegan Whipped Cream
Cocoa Powder to sprinkle on top
In a small bowl, combine the plant milk, rum extract and IdealRaw Cold Brew protein. In a separate bowl, combine the dry ingredients (flour, cacao, baking powder and cornstarch). Using a whisk or spatula, mix the wet mixture into the dry being careful not to overmix. It should be thick, but not too dry. If it’s dry add more plant milk.
Heat skillet on medium-low heat. Coat with non-stick spray to prevent pancakes from sticking. Add pancake batter ⅓-⅔ a cup at a time depending on the desired size of pancakes. Allow bubbles to form on the surface and sides firm up before attempting to flip, 1-3 minutes. Flip and cook another 1-2 minutes. Repeat with remaining batter until all pancakes are made.
Top pancakes with a dollop of vanilla yogurt then stack another pancake and more yogurt. Drizzle with chocolate syrup, top with whipped cream and sprinkle with cocoa powder.
